There are two levels, and the right one depends on what you're doing with the space. Cutting the hedge down to a low stump is quicker and cheaper, and it's fine if you just want the height and bulk gone — but the stumps stay live and many species (laurel, privet, leylandii to a degree) will try to regrow, and the root mass stays in the ground. Full removal grubs out the stumps and main roots so the line is clear for a fence, a wall, replanting, or paving. If a new fence is going on the line, full removal of the stumps along the fence run is usually needed so posts can go in cleanly — we'll advise which level your job needs.

Leylandii, laurel, conifer, and privet

Different hedges remove differently. Leylandii and conifers are tall and fast but relatively shallow-rooted, so they fell quickly and the root plates come out without too much drama. Laurel is dense, heavy, and regrows readily, so it wants proper stump removal if you don't want it back. Privet and hawthorn are tough and wiry. Either — it depends on what you're doing with the space.
