There are two levels, and the right one depends on what you're doing with the space. Cutting the hedge down to a low stump is quicker and cheaper, and it's fine if you just want the height and bulk gone — but the stumps stay live and many species (laurel, privet, leylandii to a degree) will try to regrow, and the root mass stays in the ground. Full removal grubs out the stumps and main roots so the line is clear for a fence, a wall, replanting, or paving. If a new fence is going on the line, full removal of the stumps along the fence run is usually needed so posts can go in cleanly — we'll advise which level your job needs.
Leylandii, laurel, conifer, and privet
Different hedges remove differently. Leylandii and conifers are tall and fast but relatively shallow-rooted, so they fell quickly and the root plates come out without too much drama.
